This high-protein game day dinner (or snack!) packs 25 grams of protein into a 550-calorie calzone, full of delicious, cheesy, buffalo chicken goodness. The three ingredient Greek yogurt dough takes minutes to whip up, and the filling is, once again, just three ingredients!

Butterfly the Chicken Breasts

Preheat oven to 425f. In the meantime, butterfly both chicken breasts, pat them dry, and season with salt and pepper. Bake for 18 minutes.

I've talked about this one hundred times, but I'll say it again because it's important! If you want juicy chicken, you have to pound or butterfly it. This means the chicken cooks evenly, and we aren't left with dry edges just to get the perfect center. I choose to butterfly with a knife instead of pound with a mallet, just because its a better option for households with close neighbors or sounds-sensitive family members (or pets).

Make sure to pat dry and salt, as this helps lock in moisture!

Make the Dough

While the chicken bakes, mix the flour, Greek yogurt, and baking powder until a shaggy dough forms. Begin kneading until it comes together into a smooth ball and divide into 8 pieces. Flour a surface and dust each ball with flour. Roll out each ball into a circle, a little less than a 1/4 inch thick.

This Greek yogurt dough is the king of versatility and a perfect substitute for pizza dough in these high-protein calzones! No rising time, tons of protein, and very few ingredients. It's also not a science, so adjust ratios as you need for an easier texture to work with.

Make the Filling

Remove the chicken from the oven and cool for 5 minutes before chopping into small cubes. Microwave the cream cheese for 30 seconds, then mix it into the buffalo sauce and chicken pieces in a medium bowl. Divide the filling evenly between the 8 discs of dough and fold each disc in half, rolling the edges to seal. Bake at 425f for 25 minutes. Remove from the oven and allow to cool for 5 minutes.

Don't forget to soften the cream cheese before mixing it into the filling, or you're in for a workout! This filling is creamy, spicy, and decadent!

As for closing the calzones, just roll the edges over themselves and they should seal up pretty tightly! Be sure not to bake the calzones too close together, or when they expand they'll connect and be difficult to pull apart.
