Make the Dough

Combine the yeast, sugar, cream of tartar, lemon, and water, and let bloom for 5 minutes. Add the flour, salt, butter, and warm milk and knead for 10 minutes. Cover and let rise for 1 hour. Punch down the dough and roll it into a 1/4-inch thick rectangle on a floured surface.

Why cream of tartar and lemon? They feed the yeast and make this dough rise and become nice and fluffy! It's the perfect hack for fluffy cinnamon rolls if you live in a cold climate or have an unreliable house temperature. If you're going to have healthy cinnamon rolls they at least need to be fluffy cinnamon rolls.

Make the Filling

Combine all of the filling ingredients in a blender or immersion blender cup and blend until smooth. Spread over the dough and roll the dough into a cylinder. Roll the cylinder in the egg white and then the oats. Slice it into 10 coins. Arrange them in a greased 9x13 casserole dish, cover, and refrigerate overnight. The next morning preheat the oven to 350f, leaving the cinnamon rolls out of the refrigerator while the oven preheats. Bake for 40 minutes and allow 20 minutes for cooling.

This filling is the real magic of this recipe and is also what makes these healthy cinnamon rolls. Oats are blended until smooth with the butter, sugar, and cinnamon (and a little water to loosen up the filling), so you get a smooth and creamy filling that you wouldn't even know is packed with fiber!

Make the Frosting

Combine all the frosting ingredients in a blender and blend until smooth. Spread the frosting over the cooled cinnamon rolls.

This frosting is also putting in the work to help our healthy cinnamon rolls earn their title, as everyone's favorite high protein ingredient is sneakily blended in. Cottage cheese blends seamlessly with cream cheese for a high-protein frosting!
