High-Fiber Blueberry Cheesecake Overnight Oats

These blueberry cheesecake overnight oats have lots of fiber, protein, micronutrients, and antioxidants, and they are so quick to whip up! They feel like having dessert for breakfast, and they are so pretty. They even use everyone's favorite healthy ingredient - cottage cheese!

I was initially inspired to make cheesecake overnight oats by this recipe, where he used ricotta and Greek yogurt to make the cheesecake filling and layered it on top of overnight oats. The next thing that inspired me was this cottage cheese cookie dough, that didn't taste anything like cookie dough...but it did taste like cheesecake to me! Armed with these two ideas and an overabundance of leftover blueberries from making this Blueberry Feta Chicken Salad, I set out to make my version, the perfect meal prep healthy breakfast!

Make The Base Oats

Mix all of the base ingredients, and separate into four containers. You can optionally blend this mixture to have more of a mousse texture for the oats.

I based the first part of these overnight oats on these ratios, and they make a super easy and delicious base. You just mix all of the ingredients, separate them into mason jars or small containers, leave them to sit overnight, and voila! Delicious overnight oats. You can use honey or maple syrup for sweetness, but I chose honey because that's what I have on hand.

But if you want to kick the dessert-iness up a notch, you can always blend the overnight oats until creamy so it has a mousse-like texture the following day. I first got this idea from this video that shows chocolate mousse overnight oats, but I have seen it all over TikTok lately too! I chose old-fashioned oats, but quick oats or steel-cut oats both work equally well if you're choosing to blend the base.

Make The Cheesecake Topping

Add all of the cheesecake ingredients to a blender and blend until smooth and creamy. Top the oats with the cheesecake mixture and optionally top with graham cracker crumbs and more blueberries.

This blueberry cheesecake topping comes out so creamy and velvety and has such a beautiful lavender color. Maybe I just love purple, but I think this breakfast gets an A+ for aesthetics. I added graham cracker crumbs and more blueberries to top the oats, but you could use edible flowers, chocolate shavings, coconut, or whatever you want! You could even blend some vanilla extract into the cheesecake topping for a little extra sweetness and flavor. You can also use fresh or frozen blueberries, it doesn't matter at all.

To make the topping, you just throw everything in the blender and let it go. Like, really let it go. The longer you blend it, the smoother and fluffier it will be so I recommend giving this cheesecake a thorough beating. And that's it! Just spoon the cheesecake onto the oats and leave them overnight.

The cottage cheese provides protein and healthy fats that stand in the place of something like peanut butter in other overnight oats recipes, and the Greek yogurt bumps the protein and healthy fats up even more! You could use cream cheese instead of cottage cheese, but you'll end up with a slightly more energy-dense, less protein-dense version.

Maybe in the future, I'll post a dairy-free version, but if you want to achieve that the Greek yogurt could be subbed for coconut yogurt (or another non-dairy milk yogurt), and the cottage cheese could be replaced with silken tofu.

Ingredients:


For the Base

  • 1 cup rolled oats
  • 1 cup milk
  • 1 cup Greek yogurt
  • 1-2 Tbsp honey
  • 2 tsp chia seeds
  • pinch of salt
  • dash of vanilla

For the Cheesecake Topping

  • 1 cup cottage cheese
  • 2 Tbsp honey


Method:


  1. Mix all of the base ingredients, and separate into four containers. You can optionally blend this mixture to have more of a mousse texture for the oats.
  2. Add all of the cheesecake ingredients to a blender and blend until smooth and creamy.
  3. Top the oats with the cheesecake mixture and optionally top with graham cracker crumbs and more blueberries.
  4. Leave overnight in the fridge to soak and thicken
