This Snickers overnight oats recipe uses dates, chocolate, and peanuts to make the perfect vegan, gluten-free breakfast with a delicious chocolate shell. They taste like dessert for breakfast and one serving has 15 grams of protein and 11 grams of fiber, not to mention 30% of your daily iron! These are an amazingly filling breakfast, post-workout snack, or even dessert. You can meal-prep these ahead of time so they're ready to eat whenever you need them.

Blend the Overnight Oat Base

Add oats, milk, peanut butter, vanilla, flax, cocoa, and dates to a blender and blend until smooth. Pour into two cups or containers.

Can you blend overnight oats?

Yes, and it's delicious. I got this genius idea from this recipe for blended overnight oats and I now swear by blending my oats (like these blueberry cheesecake overnight oats). It takes the lumpy, fibrous texture of overnight oats and turns them into creamy, delicious, mousse-like magic. This recipe is basically Snickers bar-flavored pudding, but it's societally acceptable to eat for breakfast.

Make the Chocolate Shell

Melt the chocolate in the microwave, using 20-second intervals and stirring between each. Pour the chocolate over the oats, top with peanuts and maple. Refrigerate overnight.

Chocolate shell overnight oats are one of the greatest concepts that TikTok has ever introduced me to, and I'm never going back! Everything is better with a chocolate layer. Pour that melted chocolate on top of your blended oats, and add some peanuts and maple syrup to get the perfect flavor and crunch that tastes just like a Snickers bar.

Ingredients:


  • 1 cup rolled oats
  • 1 cup almond milk (or any plant-based milk)
  • 3 Tbsp peanut butter
  • 1/2 tsp vanilla extract
  • 3 tsp flax meal or chia seeds
  • 1 1/2 Tbsp cocoa powder
  • 4 Medjool dates, pitted
  • 24 grams vegan chocolate
  • peanuts, for serving
  • Maple syrup, for serving


Method:


  1. Add oats, milk, peanut butter, vanilla, flax, cocoa, and dates to a blender and blend until smooth. Pour into two cups or containers.
  2. Melt the chocolate in the microwave, using 20-second intervals and stirring between each.
