Fluffy, moist, and decadent, you won't even know these cottage cheese protein pancakes are under 300 calories with 12 grams of protein each. The cottage cheese is completely undetectable, and it just helps add to how fluffy and moist these pancakes are.

Ingredients

  • All-purpose flour
  • Sugar
  • Baking powder
  • Baking soda
  • Buttermilk
  • Cottage cheese, blended
  • Unsalted butter, melted
  • Eggs, whites, and yolks separated

Mix the Batter

Whisk together flour, sugar, baking powder, and baking soda in a bowl. In a separate bowl, whisk the buttermilk, blended cottage cheese, melted butter, and egg yolks. Add the wet ingredients to the dry ingredients and fold with a rubber spatula, not overmixing but eliminating all flour lumps. Fold in the egg whites, until there are no lines of egg white visible in the batter. Allow the batter to rest for 20 minutes.

There are a few funny things about this batter. The first is that the egg whites are mixed in afterward. I learned that trick here, and it just helps keep your pancakes fluffy, even though you don't whip them first. The second thing is pretty typical, and that's the wet and dry ingredients are mixed separately. This just helps make sure everything is evenly distributed, for uniform pancakes.

The third funny thing is the blended cottage cheese, but it's the secret to fluffy, moist, high-protein pancakes. Seriously, the smooth and creamy texture of the cottage cheese means you will never know it's there but it makes these pancakes perfect!

Make the Pancakes

Heat a greased pan over medium heat and scoop in 1/3 cup of the batter. When it begins to bubble, flip and allow to cook through. Repeat until all the batter is used, greasing the pan again when necessary.

Making perfect pancakes is an art, not a science. You want your pan greased, but not too greased, hot, but not too hot. If you're hearing a lot of sizzling when the batter hits the pan, it's probably too hot. If you don't hear anything at all, it's probably not hot enough. It takes a little practice and the first pancake is almost always ugly, but don't fret, they get better as you go!

You can serve these with butter, maple syrup, peanut butter, jam, whatever you want!
