These sweet, salty, peanut buttery, chocolate-covered dates taste like a Snickers bar, but with 4 grams of protein and 2.4 grams of fiber in each date! They're the bite-sized version of this date bark and will surely be one of your new favorite snacks.

Ingredients

  • Medjool dates
  • Peanut butter
  • Peanuts
  • Vegan chocolate chips
  • Coconut oil (optional)
  • Flaky sea salt (optional)

Pit the Dates

Using a knife, cut a slit in each date, remove the pit and open slightly.

You can pit the dates with just a butter knife, and it will cut through them just fine. Just the smallest slit should allow you to open the date and remove the pit. Easy as that, they're ready to be filled with peanut butter.

Stuff the Dates

Fill each date with about a teaspoon of peanut butter and a couple of peanuts.

If you do an exact teaspoon, you're going to have a little extra peanut butter, so I used slightly more than a teaspoon per date and two peanuts. The peanut butter adds a delicious creaminess and the peanuts add crunch, the perfect combo.

Melt the Chocolate

Melt the chocolate (and coconut oil if you want to make dipping the dates a little easier) in a microwave-safe bowl in 30-second intervals, until the chocolate is completely melted.

Yes, it would be a safer bet to do this over a double burner, but time is money, and money is chocolate, so we're using the microwave. A spoonful of neutral oil like coconut helps the chocolate thin out a little more so that it's easier to work with, but this can still work if you don't add anything. Just don't melt it for any longer than 30-second intervals, or it might burn.

Dip the Dates

Dip each date in the chocolate, flipping with a fork to ensure completely covered. Place in a container or on a baking sheet lined with parchment paper (and sprinkle with flaky sea salt, if desired) and chill for 10 minutes or until chocolate is set.

This part is super easy, just work quickly so the chocolate doesn't solidify. I place the dates on parchment paper so they're easier to lift off, but they really aren't very sticky once the chocolate is set so don't worry too much about it.
