This peanut butter chocolate date bark tastes like a Snickers bar but with way more protein, fiber, and micronutrients. If you want a dessert that helps you feel full and satisfied, this date bark is the way to go!

Peanut butter, dates, chocolate and peanuts

Ingredients

  • Medjool dates
  • Peanut butter
  • Peanuts, roasted and salted
  • Vegan chocolate chips
  • Flaky sea salt, optional

Open and Arrange the Dates

Line a baking sheet with parchment paper and grease. With a butter knife, cut a vertical slit in each date. Remove the pits, and then unroll the dates to be flat. Place them in 3 rows of 3 on the baking paper.

I've seen a lot of date bark recipes that used the bottom of a glass to smash the dates flat. This method is, in my opinion, difficult and insanely inefficient. The dates are going to stick to the glass, and they're never going to get flat. If you're already cutting a slit in the date to remove the pit, then you can just unroll the date once it has a little cut in it, and there you go, it's perfectly flat and not stuck to anything.

Melt and Spread the Peanut Butter

Melt the peanut butter in a microwave-safe bowl for 30 seconds. Pour over the dates and sprinkle the peanuts over.

This part is too easy. Just melt the peanut butter so it's pourable or more spreadable, and pour/spread it on top. If you don't melt it first, the dates are just going to be moving around everywhere and it's going to be a mess.

Melt and Spread the Chocolate

Melt the chocolate in a microwave-safe bowl in 30-second intervals, stirring between each one. When the chocolate is melted, pour over the peanut butter. Sprinkle with flaky sea salt and freeze for 30 minutes.

Why 30-second intervals? This is just going to prevent the chocolate from burning. You could also melt the chocolate over a double boiler (a pot full of boiling water with a separate bowl containing the chocolate placed on top), but that takes a little bit longer and is slightly more of a pain. The microwave is quicker and easier, and you could make it go even faster by adding a little coconut oil.
